Daily Duties:

  • To ensure that all kitchen duties have been carried out correctly in accordance with procedures i.e. cleanliness of work areas and equipment, food preparation, etc
  • To ensure that food is prepared, cooked and served to the highest standard
  • To observe Bluestone Health & Safety procedures. You have a responsibility to work safely at all times and to report any potential hazards, faults or problems by following the escalation procedure.
  • To attend and complete training courses as required.
  • To carry out all duties as and when required by the Chef de Partie / Sous / Head Chef
  • To maintain excellent product knowledge, competently answer any guest queries and be able to promote available products/activities

To assist in the day to day running of Bluestone’s kitchens, ensuring that high standards are achieved both in the provision of food served. As part of the apprenticeship, you will gain knowledge and learn the skills and behaviours required.  Through exposure, you will have the opportunity to grow and develop your skills.  This Apprenticeship is designed for learners to work in a range of hospitality and catering outlets across Bluestone on a carousel basis. You will be required to:

  • Prepare meat for basic dishes
  • Prepare poultry for basic dishes
  • Prepare vegetables for basic dishes
  • Prepare and mix spice & herb blends
  • Cook & finish basic meat dishes
  • Cook & finish basic poultry dishes
  • Cook & finish basic vegetable dishes
  • Cook-chill food
  • Cook-freeze food
  • Prepare, cook & finish basic hot sauces
  • Prepare, cook & finish basic soups
  • Make basic soup
  • Prepare, cook & finish basic pasta dishes
  • Prepare, cook & finish basic vegetable protein dishes
  • Prepare, cook & finish bread & dough products
  • Prepare, cook & finish basic healthier dishes
  • Set up and close kitchen

Apprenticeship Course:

Professional Cookery Level 2

22 hours @ £7.50/hour


16-30 hours per week
