Role Overview:

We are seeking a passionate and enthusiastic Demi Chef de Partie – Pastry to join our kitchen team at our countryside boutique hotel. The successful candidate will support the senior kitchen team in producing high-quality desserts, pastries, afternoon tea items, baked goods and other sweet offerings. Key Responsibilities:

• Prepare and produce a range of high-quality desserts, pastries, cakes, breads and baked goods.
• Assist with the preparation of desserts for the hotel's restaurant, afternoon tea, events, functions and private dining.
• Support the development of seasonal dessert menus and special occasion offerings.
• Prepare mise en place efficiently and ensure all pastry sections are ready for service.
• Maintain consistently high standards of presentation, flavour and portion control.
• Work closely with the Head Chef, Sous Chef and wider kitchen team during service.
• Ensure all food is prepared and stored in accordance with food hygiene and health and safety regulations.
• Maintain a clean, organised and well-stocked pastry section.
• Monitor stock levels and assist with ordering and stock rotation.
• Minimise food waste and support the kitchen in maintaining good cost control.
• Follow recipes and hotel standards while also contributing creative ideas when appropriate.
• Assist with the training and support of junior members of the kitchen team when required.
• Maintain a positive, professional and cooperative attitude at all times.

Skills and experience: The successful candidate should ideally have:

• Previous experience working in a professional kitchen or college graduate, preferably within a pastry or dessert section.
• A genuine passion for pastry, baking and dessert preparation.
• Good knowledge of basic pastry techniques and ingredients.
• The ability to work efficiently in a busy kitchen environment.
• Good organisational and time-management skills.
• Strong attention to detail and presentation.
• A willingness to learn and develop professionally.
• The ability to work as part of a team as well as independently.
• Knowledge of food hygiene and health and safety procedures.
• Flexibility to work evenings, weekends and holidays as required.

• Use of the diagnostic assessment tool WEST to plan learner support and delivery
• Responsible for arranging conducting and invigilating controlled tasks with learners in line with CTC and awarding body requirements
• Responsible for carrying out any administrative work associated with the Essential skills qualifications such as preparation, marking and assessment
• Use of e-portfolio and Google drive to maintain and store learner records
• Attending standardisation sessions and undertaking and recording own CPD
• Working as part of a team along with the Training Officers to ensure the learner achieves their Essential skills and Framework in a timely manner
• Accountable for supporting and engaging with learners and employers
• Communicate regularly and effectively with the team and wider operational units

About the apprenticeship

Duties

Operation of a busy kitchen in compliance with HACCP regulations. Maintain a high standard of kitchen hygiene, ensuring a safe working environment for fellow staff and customers. Ability to multitask and work under a high-pressure environment during busy service times. Preparation, cooking and running a section of the kitchen.

Pay: £12-14

Hours of work: 16-30 hours per week
