About Us

In 2022 CWRW OTLEY installed a microbrewery on site at Gastropub, the Bunch of Grapes which has been RCT’s Campaign for Real Ale (CAMRA) pub of the year on numerous occasions. With a 500 litre brew length and 5 x 500 litre fermenting vessels (FV’s) these have capacity for the Bunch of Grapes and to supply to selected trade outlets. Focussing on producing some of the best cask beers in Wales, CWRW OTLEY is resurrecting craft ales from a heritage range previously produced through OTLEY BREWING CO, as well as introducing a new range already receiving recognition through awards.

Typical / Daily Duties:

Brewing is 90% about hygiene and 10% producing the beer. Daily duties will therefore include ensuring the brewery and its equipment reaches and continues to keep high levels of cleanliness. Through cleaning and sterilisation, essential learning on how good and bad bacteria affects the brewing process will develop a clear understanding on how to create excellent beer. To achieve this, tasks include; washing casks ready for refilling, refilling those casks when they are sterile clean and learning how to finish the beer in those casks to make sure the beer reaches the customer in a high quality condition. Part of the brewing process also includes the careful transfer of the beers between fermentation and conditioning vessels and learning how to transfer beer into kegs under specific conditions known as ‘equilibrium pressure’. There will also be occasions when the apprentice will be required to assist the brewer making deliveries to customers and picking up empties. As well as assisting the Head Brewer with each brew, helping to record information, then bringing that information together to create accurate records of each brew will be necessary. This will include developing an understanding of accurate stock control and checks and recording of those checks to ensure that stock is protected from humidity and pests as well as records for HMRC compliance for tax purposes.

Desirable Personal Qualities:

We are looking for someone who is friendly and engaging but more importantly, eager to learn and able to focus on individual tasks and complete them to a high standard by being meticulous in their approach. They will be motivated and eager to learn and develop their knowledge, skills and experience of brewing. Timing within the brewing process is absolutely essential and so punctuality is a crucial aspect of the role.

Any brewing qualification would be an asset, or any qualification with a science/chemistry background. Maths and English are essential, cookery or hospitality experience to a good level would be a bonus.

  • To ensure all monies are handled correctly and taking necessary steps to safeguard all company money, goods and assets.
  • Ensure all documentation and transactions are recorded accurately following departmental guidelines.
  • Checking all files/correspondence ensuring that room rates are correct prior to guests’ arrival, communicating with the Sales Team to resolve queries.
  • To ensure that all room accounts are billed correctly and any outstanding amounts to be invoiced and monitored.
  • To make sure that all jobs and tasks contained in the daily job sheet are completed adequately and efficiently before your shift is finished.
  • Read and understand the daily business sheet, informing the relevant departments of any changes.
  • Ensure the areas you are responsible for are adequately stocked and appropriately available to meet customers’ and colleagues’ needs and requirements.
  • Ensure the areas of responsibility are kept presentable and tidy.
  • To be polite, helpful and maintain a positive attitude of communication to Guests, Residents, Members and Colleagues at all times.
  • To attend any departmental and training meetings as required.

Apprentice Butcher Dewi James Butchers 38 High St, Cardigan SA43 1HE Daily Duties: The daily duties will vary, but in general - cutting, packing, using machinery, preparing stock for both fridges and our display, taking and preparing orders, including invoicing and possibly delivering too, they will also be cleaning, washing, filling out HACCP paperwork. They will also be subjected to serving customers, cutting carcasses, preparing mixes for sausages, bugers, etc. All of which while learning the trade and skills to accomplish these daily tasks. Desirable Personal Qualities: The candidate must have drive to learn and want to become part of the team.  They must be able to work independently and as a team, responding to team members requests and commands. The person must have some level of knowledge retention when going through the training routine, ensuring the guidelines and lessons are not needed to be constantly repeated. Duties: • Working on the manufacturing lines across the manufacturing operation producing high quality desserts • Learning additional tasks and skills in all areas of the manufacturing operation enabling • Assisting in the meeting of daily production plans ensuring the quality standards are met • Operating and running machines in the bakery area to produce mixes, having to follow recipes and product specifications and ensure all the correct process are followed. Complying with the company quality policy and procedures specifically health & safety checks. Following the relevant critical control points in the process for example the sieving of flour etc. Understanding the importance of allergen control • Operating and running the ovens, being able to carry out general maintenance (greasing, cleaning etc). Understanding and being able to adapt baking times and temperatures based on different products and seasonal differences on products • Hand building finishing and decorating cakes and gateaux to the product specification.
