The Ship Inn, New Road, Caerleon. NP18 1QF Daily duties will include: Clean and maintain a safe and hygienic kitchen environment including preparation, cooking and storage areas. Complete food safety management system documentation. Work with others to ensure dishes produced are of high quality, delivered on time and to the standard required. Contribute to reviewing and refreshing menus and providing input on new menu suggestions and ideas. Desirable personal qualities: Weekend and evening availability is a must for this position. You will have a “can do” attitude along with a pride in your appearance and your timekeeping. Willingness to learn and to have a basic knowledge of food hygiene. The ability to work well under pressure and to work well as a team member. - Read and understand the daily business sheet, checking with the Head Chef or Duty Manager for any additional details.
- Prepare prep lists for mis-en-place for future days.
- Check all temperatures in refrigerators and freezers and record relevant data in accordance with the Health and Safety Regulations.
- Lead section of the kitchen area.
- Control wastage and portion sizes to aid achievement of departmental budgets.
- To ensure that all working areas are kept clean and tidy at all times.
- To prepare, cook and serve food as specified by the Head Chef.
- To assist the Head Chef and Sous Chef in ensuring HACCP is in place.
- To assist in food ordering by informing the Head Chef when stocks are reaching par stock levels.
- To attend any departmental and training meetings as required.
- To be dressed in a smart and professional manner.
- To comply with all health and safety legislation.
- To be fully aware of the :
- Accident reporting procedure
- Maintenance fault reporting procedure
- Fire Policy
- To understand how the Hotel’s health and safety policy affects your department and how it links in with the rest of the Hotel.
- To be a valued member of your Hotel team, helping and advising colleagues where required, promoting the image of the Hotel and that of the Company at all times through active sales activity and a positive approach.
- To undertake any other reasonable duty as requested from the management team or your Head of Department.
