Cambrian Training Company (CTC) is celebrating a major triumph after professional cookery apprentice Adam Pike, at his first attempt, was crowned Skills Competition Wales Culinary Arts Champion, alongside impressive debut performances by CTC apprentices Bleddyn Daw and Elliott Joseph that were both highly commended by the judges.
Stepping into the Culinary Arts competition for the very first time, Adam Pike didn’t just hold his own — he stole the show. Over an intense three‑hour cook‑off, Adam delivered a polished, restaurant‑quality three‑course menu that wowed the judges and secured him first place in a highly technical challenge.
His menu showcased skill, creativity and a deep respect for Welsh produce, including:
- Two identical portions for the Risso Gallo Risotto Challenge, featuring his sweet potato risotto with crispy leeks and sweet potato crisps finished with herb oil
- His modern main course showcased Welsh pork tenderloin with a red wine jus, crispy potato well with parsnip puree and picked blackberries and seasonal root vegetables
- His beautifully presented apple‑based dessert with hot and cold elements was a crème brûlée with warm chocolate crumble and rum apple jelly.
Adam’s calmness under pressure and meticulous attention to detail earned glowing praise from the judging panel — and from his training officer, Melanie Canning, who has supported his journey from day one.
“Adam’s apprenticeship is not just about learning — it’s about growth. His work ethic, creativity and commitment to improving his skills are what turn potential into real achievement. The dishes he produces wouldn’t look out of place on any restaurant menu.”
Adam wasn’t the only Cambrian Training apprentice to shine. Bleddyn Daw (Level 3) and Elliott Joseph (Level 2) also impressed the judges, both earning Highly Commended recognition in their first year of competition.
A Milestone in a Promising Career
Currently completing his Level 3 Professional Cookery apprenticeship, Adam entered the competition to push himself and showcase the skills he has honed over the past two years. He credits Melanie’s guidance and honest feedback for helping him refine his techniques and build confidence.

Celebrating Success Across Wales
All medallists were recognised at the Skills Competition Wales celebration event on 18 March at the Pavilion Theatre, Rhyl — a proud moment for the apprentices, their employers and the Cambrian Training team.
Their achievements reflect Cambrian Training Company’s ongoing commitment to developing exceptional culinary talent, strengthening the Welsh hospitality sector and supporting
